Fattoush

  • pita, cut into triangles
  • 1 romaine, chopped
  • 1/2 green pepper, diced
  • 2 tomatoes, diced
  • 1-2 persian cucumbers, sliced and quartered
  • 2 radish, thinly sliced
  • 2 green onions, chopped
  • small bunch of parsley, chopped
  • optional toppings:
    • pomegranate seeds
    • feta

For the dressing

  • garlic, 1 clove, pressed
  • pomegranate molasses. 1 tsp
  • olive oil, 2 tbsp
  • lemon juice, 1 tsp
  • s+p

So simple, so easy, so delicious. Just toss all your veg in a bowl, mix up your dressing. For the pita, (which is the what really makes this salad, along with the pomegranate molasses in the dressing) you just cut it into little pita triangles and sautee with oil and s+p,  until crispy. When finished, toss your pitas in with the salad and dressing and crumble some fresh feta (make sure its sheep feta) on top. You can throw fresh mint leaves on or a dash of sumac if you have these things laying around.
