This is a nice easy japanese-y dish you can prepare when you fancy a vegetable packed meal. The variations are endless. Sometimes I like to do a cold version with seaweed, or another one with a peanut sauce but the recipe I’m putting here today makes for a great filling dinner. My favorite veg to include are edamame, bok choi, summer squash, red pepper slices, broccoli, and mushrooms (for nick, not me,

Alternative Grain Pastas
I said in my previous post that I have an affinity for noodle-y foods. Unfortunately that means ya girl gotta watch herself of eating too much pasta. Determined not to completely abandon said noodle love in my effort to obtain hot summer bod I have been exploring alternatives.
I have been interested in alternative pastas for a while now as so many have sprung up that use anything from mung bean to black bean,

This post is a bit of a tangent from a regular recipe post but I’m doing it for any of you out there who have felt the impending doom of summer bod expectations around the corner. You see, I started shopping for a bikini the other day and felt really depressive and started getting all pissy with Nick – I finally put it all together and realized self-esteem was at an epic low as I stood in front of my bathroom mirror looking at my ballon of a belly.

I guess it must be pie season for me with all the cold we just had we just seem to be fancying pies all the time. Pies and thai, so weird…Anywhoo, this pie is a comforting, creamy, delicious, hearty pie that Nick periodically requests. If you want to convert some meat-eaters to our dark side you can add some large TVP chunks to make this a mock chicken pot pie they will love.

Have you ever made your own granola? If you have, you know the struggle is always to get that delicious and necessary crunch – and god knows there is an over-abundance of online recipes and articles about how to get that lovely crunch – here’s another.
First, a note on granola. Granola is silly expensive for being a bunch of crispy oats. I never buy it anymore – I just always have lots of nuts and seeds on hand (as you should as a veg,

I seem to be into fusions ever since our successful merge of two leftovers to make Indi-opian (two of the best cuisines ever, Indian and Ethiopian!) last month. Then there was last weeks deeee-lish southern style greek pie…now I bring you a Thai-Indian (Thaidian? Indai?) creation that features red lentil, kale, potato, tomato and coconut-y goodness and it is damn tasty if I do say so myself. Have it on a day you are craving something warm and hearty and packed with flavour.

Collard green spanakopita!
This is kind of a double recipe post because first we need to document Nick’s delicious collard greens… well as much as possible because it’s really a feel thing. a pinch o’ this a dash of that, stir, taste, adjust. Repeat about 5 times.
The spanakopita is my side of the equation. I came up with this because we had just bought 3 bunches of collards that were each the size of small children.

Like a distant long forgotten voice from the beyond I return to vegetarian fork.
I don’t know what to chalk my absence up to – I suspect it’s because after all the new changes in our life I got an office job (hopefully the last time you hear me say that) and then Nick did too so we were kicked off into exploring the pleasures of eating out,

I have had a huge blog hiatus. Rarely do I like to include personal details on here as it is a food blog – but right now, as I’m sure many of you have felt at one time or another – the cooking life and the personal life is intertwined. In the past 4 months I have a new house, new job, a baby kitten and a kitchen I don’t love! The last one is the only bad one,

Ok, summer is upon us here in Atlanta and that means it’s the season of ‘Ruby and Nick want salads every day!’ – also the only time of the year I don’t crave a 5lb bowl of veggie bolognese…so expect to see a lot more simple salad recipes pop up in the next few months. One of the biggest challenges with the hot summers here is finding something simultaneously refreshing and substantial enough to constitute a dinner.
