I’ve been a veg forever (well, my forever; birth). Growing up, my lovely mum was always on the lookout for interesting vegetarian foods and would buy the latest in whatever fun new product there was – so I got to try it all (for better or worse), from Tofurky to Boca. Though I was lucky to live in the time of specialty health food stores, back in the day, meat substitutes and generally fun veg options were not as bountiful (and certainly not as cheap) as they are today.

White Truffle Courgette Focaccia
Forward: Though I have been mostly Americanized at this point, I still have some stubborn English-isms, courgette (aka zucchini) is one of them, up there with the pronunciation for basil (bah-zul NEVER bay-zil, yuck).
Sometimes (though rarely) good things come out of roommate situations. Learning that white truffle oil is the tits was one of those things. This recipe is a distant relative of something our old roommate would make that was kind of like a white pizza that we have adapted over the years.

I wasn’t intending on reviewing El Super Pan, it was meant to be a quick dine and dash but I keep finding myself returning and the last time I stopped in there with Nick we both remarked on how we have to write a post.

This is a nice thing to make in bulk to last you for the next couple days. You can easily add or change a couple things to take this in some different directions. Sometimes I like to add yogurt, creme fraiche or goat cheese (the best). The stock you choose could really thrust it in different ways, I have added a pic of my go-to stocks, the better-than-bouillion vegetable flavour is good too.

Nick and I went to Daytona Beach last week to buy an RV (we are crazy people). More about that later..maybe. Anywhoo, whenever we go down south to the FL beaches we relish in the large expansive ocean view, daiquiri’s, long walks on the beach, etc.etc. Food unfortunately is not one of those things. A baked potato is a godsend out there for me in the realm of fried nothing food and maybe a wilted ‘garden salad’

The basic principle of this simple tofu dish is to suck every lil bit of moisture out of that tofu and make a tasty paste to pour over that it can suck up. I usually just use white miso paste, garlic, and tamari but sometimes I will add in some ginger or ‘Veri Veri Teryaki‘ instead of tamari or sesame seeds at the end as a little finish.

As you can probably tell from all the pictures in this post, I am enthused about a lot at Candler Park Market Deli. Their make-your-own deli sandwich is a favorite for me and it costs what I think every sandwich should cost; $4.50. The deli fridge holds all sorts of wonderful veg pre-mades from dolmas (YUM), tofu sammies and noodle salads. They have beer and wine for days, the deli ladies are lovely, you can walk to the park,
